Bravado Chilli Pepper Chicken

  • Whole Chicken x 1 
  • Fresh Bay Leaves x 20g 
  • Fresh Thyme x 40g 
  • Fresh Sage x 40g 
  • Orange x 1 
  • Garlic x 3 Bulbs (Halved)
  • Limes x 2 (Halved) 
  • Salted Butter x 250g 
  • Sea Salts (Generous) 
  • Pepper 
  • Bravado Chilli Pepper Jam x 2 tablespoons

    STEP ONE:

    Preheat the oven to 180oC. Place the chicken in an oven proof tray. Stuff the chicken with an orange and rub the butter onto and under the skin. Salt generously and cook for 1 hour.

    STEP TWO:

    Remove from the oven and add garlic bulbs, limes, bay leaves, thyme and cracked pepper to the dish and add Bravado Chilli Pepper Jam over the chicken.

    STEP THREE:

    Place back in the oven and repeatedly baste the Bravado Chilli Pepper Jam every 5 minutes back over the chicken ensuring that it does not burn. Continue to cook and repeatedly baste until the chicken is fully cooked and the juices run clear (approximately 30 minutes).
